All of my groceries are delivered through Amazon Prime Fresh, about once a week. I know that many are rummaging for things to make for dinner, and we’re reaching into the back of our cabinets, or…or we are going to get food at food drives. That is happening A LOT in Miami.

My friend received an entire crate of tomatoes yesterday, and it reminded me of This Slow Cooker Tomato Basil Soup Recipe – it is PERFECT for those of us who are quarantined and trying to figure out how not to waste all of our fresh veggies!

This Slow Cooker Tomato Basil Soup Recipe uses fresh tomatoes – not canned! Now, of course you can use canned tomatoes, but let’s all be real, okay? Canned never tastes as great as fresh vegetables, and this Slow Cooker soup recipe is so easy to make you aren’t even going to care about any “extra steps.”

You have them too, huh? All these awesome tomatoes fresh from the garden. But, no clue what else other than salad and burgers to use them for, right? How about some Slow Cooker Tomato Basil Soup? How to Make a Slow Cooker Tomato Basil Soup Recipe

This Slow Cooker Tomato Basil Soup is pretty much the simplest recipe you will ever make…and hello! It’s all contained in a simple slow cooker, so less work, less mess, less dishes – it is just about PERFECT. Of course, I say this as I am sitting here in the midst of a chilly cold front, but my point stands. 

Slow Cooker Tomato Basil Soup Recipe 

Ingredients

  • 6 cups tomatoes pureed, or substitute 3 cans diced tomatoes
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 1/4 cup basil, finely chopped
  • 1 tsp oregano
  • 2 cups half and half
  • 1/2 cup flour
  • 1/2 cup butter
  • 1 cup Parmesan cheese, freshly grated
  • salt and pepper to taste

Directions

If using fresh tomatoes, puree up 6 full cups and don’t drain any liquid. (if using cans, don’t drain liquid) Pour into slow cooker.

Add onions, oregano, basil, half and half and finally the chicken broth. On low cook covered for 5 hours. Stir occasionally.

About 1/2 hour before you’re ready to serve, make up a quick roux. Use small saucepan over low heat to melt butter, add flour and stir for about 3-5 minutes. Don’t let this burn! Add in 1 cup of cooked soup and stir until super smooth.

Lumpy tomato basil soup is yucky. Pour this back into your slow cooker and stir to incorporate well. Continue to cook on low for about 30 minutes until soup is thickened.

Add Parmesan cheese, let sit for 5 minutes until melted. Salt and pepper to taste.

See, comfort food! We make this using our fresh tomatoes in the summer and use cans in the winter. It’s awesome after being outside building snowmen with the kiddos on cold days too!

What kind of sandwich should you make to go alongside a slow cooker tomato soup? DUH! Always a grilled cheese, of course! I love using sharp cheddar and mozzarella for extra cheesy goodness. Of course, any old kind of cheese will do, but cheddar is the BEST! I can even get behind a Kraft cheese slice if that is really all you have…yes, I am picky like that! I prefer REAL cheese, not cheese food. But I have clearly eaten a Kraft Single or two in my day – no judgement here! I just want you to have the very best grilled cheese sandwich you could possibly have! Shoot, I would even approve of grilled BRIE sandwiches! YUM!
