Egg BLT and BLT Breakfasts

Really simple start to the day. Here are two takes on breakfast BLT’s.

Ingredients

  • Baby Gem Lettuce Leaves or Romaine Lettuce Leaves
  • 1 Beef Tomato (sliced)
  • 2 rashers of Smoked Back Bacon
  • Egg
  • Mayonnaise
  • Vinegar
  • Smoked Paprika
  • Pepper

Grill the bacon and tomato and when ready, place the bacon and tomato on a baby gem lettuce leaf. Add a dash of pepper and then place a knob of mayonnaise on top. Finish by sprinkling some smoked paprika on top. Use the lettuce leaf as a taco to pick up and eat.

Grill a rasher of bacon and a slice of tomato. Poach an egg in boiling water and vinegar. The vinegar helps keep the egg together. Make sure the egg does not stick to the bottom of the pan, by gently prying it away from the bottom if it sticks.

Place the bacon, tomato and then egg on top and add a sprinkle of smoked paprika. If you like your poached egg runny – do not try to use the lettuce as a taco. You should have seen the mess of me !!

On this occasion use a knife and fork and enjoy.

These are so tasty with a nice cup of tea or coffee.
