Cajun Chicken Skewers

Cajun Chicken Skewers

Perfect for barbecue season.

These skewers take minimal prep and pack maximum flavour. Perfect for a summer BBQ or even a simple meal accompanied with homemade tzatziki and pitta bread.

Ingredients

2 x raw chicken breasts
1 x large red onion
1 ½ x large bell pepper
1 x tablespoon paprika
1 x tablespoon cumin
1 x teaspoon chilli flakes
1 x tablespoon mixed herbs (or thyme / oregano)
1 x tablespoon white wine vinegar
2 x tablespoon olive oil


Basic Summary

  1. Chop veg and chicken
  2. Mix with spices, oil ,and vinegar, and leave to marinate
  3. Skewer chicken and veg
  4. Cook on high heat on either Grill or BBQ

Prep.

Chop all your veg and chicken up into large chunks.

Put all ingredients into a large bowl.

Add the oil, vinegar, paprika, cumin, chilli flakes, and mixed herbs, and mix well.

Leave to marinade until ready to start cooking. Preferably 2+ hours or overnight, but as long as you have is fine.


Make.

{Preheated grill or BBQ to high temp – 220°C+}

Skewer the veg and chicken.

TIP: If using wooden skewers, soak them in water before using to help stop them from burning when cooking the food.

Cook skewers on the BBQ or grill for at least 15 minutes or until cooked through.

Serve with rest of BBQ food or with Salad and Tzatziki.
